Recently I’ve have a few requests for my hummus recipe, so below is my non traditional hummus recipe. Hope you enjoy.

1 can chick peas (preferably organic)
1 small clove of garlic
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon lemon zest (preferred, but not necessary)
1 tablespoon fresh lemon juice
About 1/3 cup vegetable oil (maybe more or less)

In a mini prep or a food processor, toss in the garlic and mince. Add in the remainder of the ingredients, except the vegetable oil. Give all of the ingredients a few pulses in the food processor. It is going to start clumping together. At this point, you want to slowly drizzle in the vegetable oil. Continue to drizzle the vegetable oil in until you hit your desired consistency. Once done, put into a bowl to let chill in the fridge for a bit before serving. I like to top my plain hummus with a drizzle of olive oil and a healthy squirt of lemon juice and a dash of salt.

The above recipe is a perfect base for hummus. Simply adding about a teaspoon of pesto to the mixture enhances the dip. Or you can mince up some sun dried tomatoes in oil along with the garlic for a delicious sun dried tomato hummus. You can add crushed red pepper to the simple hummus. Get creative and just add your favorite spice. The key is to do it a little at a time.

Serve hummus with toasted pita bread or chips. My personal favorite is to cut up as many colored vegetables as possible to serve along side the hummus instead of the bread. Enjoy!
